What about Rhonda’s potato soup?
(stolen from an e-mail to Monnie)
- Peel and dice 4-5 medium red potatoes
- chop 2 or 3 stalks of celery and 1 small onion in food processor, * add to potatoes and cover with water
- add a little milk or cream (half and half is what I added), maybe about a half cup
- add 3 Tablespoons of butter, salt, pepper, garlic powder to taste.
- I think I also put a little Cavendars in too.
- Boil it until the potatoes are tender and then get the potato masher and mash them some in the boiler. Don’t just mash them to mush, but small piees.
You can make it soupier with water, or less soupy, however you want.
